How do I back up my Firefox, thunderbird and seamonkey before updating my Ubuntu and firefox?

No idea about seamonkey, but for firefox and thunderbird just backup the hidden folders ~/.mozilla and ~/.mozilla-thunderbird. Saemonkey may also be in the ~/.mozilla folder, but I've never used it in ubuntu so don't know.
what ajgreeny is correct. i'll just corroborate that seamonkey is in .mozilla, and also that thunderbind can be in .thunderbird as well (depending on version)
if you back up those directories, you should have a complete back up of your profiles.
