There's a lot of cool features available in pulseaudio that cannot be used from either the gnome volume control or pulse's own control panel The only way to do a lot of advanced stuff is to edit the config files manually
Like the ability to split a 6-channel (5.1 surround) card into 3 virtual stereo sound cards
I wish Ubuntu (or ideally, upstream Gnome) would expose pulseaudio's full potential via the GUI

You don't need padevchooser for that, just paprefs. padevchooser is effectively obsoleted by the pulseaudio support in gnome-volume-control.
