You can use Gedit or an IDE such as Geany to edit the source code of the kernel. Be careful what you edit though as over-zealous editing will cause the kernel to break and potentially will result in compilation problems.
For writing it to an ISO so you can burn it to a DVD, not too sure about as I never actually compiled a kernel... yet.
but can you make it into an iso? Your custom kernel into iso? also what kind of config files can i edit?
