It doesn't matter how convenient a meeting time is for someone, they are still just as likely to not show up. I don't mean to discourage anyone by saying this, just that's my experience having been in both a company that tried to boost meeting attendance, and a fraternity.
I prefer weekdays, Because weekends I'm often out doing stuff, and don't want to be bothered. Come friday night oftentimes my cell phone is off, and my computer is off, and I don't touch it again 'till monday morning. ... so weekdays.
