I just installed Ubuntu 7.04 after having version 6.XX...yet when I post in the forums I still see the old version next to my avatar info...can this be updated or chanced to reflect what I have?

Click on User CP from the menu at the top and select User Control Panel from the drop down box. Scroll down a bit and select "Edit Profile" in the left menu. Scroll down again and you will come across an option "Ubuntu Distro" where you can "Select your Ubuntu flavor" from the drop down box.

The entry you see was also made by you. You just have to edit it.
